Ancient Canarian potatoe croquettes

 

Ingredients.

•  2 kg potatoes (bonitas, azucenas, etc.)
•  Salt and white grinded pepper
•  500g / 1,1 lb Sofrito ( chopped onion and garlic fried in oil)
•  150g / 1/3 lb butter
•  4 yolks
•  Oregano to taste
•  150g / 1/3 lb flour
•  150g / 103 lb breadcrumbs

Method.

Stew the potatoes, smash them wit the fork, let it cool down, mix with salt, pepper, butter, the yolks and the oregano. Form little croquettes, spread with egg, flour and breadcrumbs, fry and eat.

Presentation:

As accompaniment for any dishes.
Monje tradicional (Bodegas Monje)

This is a traditional young red wine made by blending Listan Negro, Listan Blanco and Negramoll varieties. The production still obeys a few age-old rules like maceration in small open tanks and fermentation in oak casks. This ruby red wine with violet hues smells of truffle, blackberry, minerals and other much more indefinable elements so characteristics of its varietal origin. It is a gutsy wine to drink, full of character and zest whit a slightly bitter finish that gives it a classy, original touch. This young wine is put on the market when five months old and should be drunk within two or three years.
